- Skate With Capers

Ingredients:

- 2 and 1/4 lbs (1 kg) skate wings
4 tablespoons extra virgin olive oil
1 onion, chopped
1 garlic clove
1 fresh flat-leaf parsley sprig, chopped
1 and 3/4 lbs tomatoes (800 grams) peeled and chopped
1 tablespoon capers, drained and rinsed
Salt and pepper

- Directions:

- Cut the skate wings into fairly large pieces.
Heat the olive oil in a pan, add the onion, garlic and parsley and cook over a low heat, stirring occasionally, for about 10 minutes until the onion is lightly browned.
Add the tomatoes and capers, season with salt and pepper to taste and cook, stirring occasionally, for 10 minutes.
Place the skate in the pan, add 2-3 tablespoons warm water, if necessary, and cook for about 30 minutes. Serves 4.
