- Skate With Capers
- (Razza Ai Capperi)

Ingredients:

- 2 and 1/4 lbs (1 kg) skate wings
- 1 onion, chopped
1 garlic clove
- 1 and 3/4 lbs tomatoes (800 grams) peeled and chopped
1 tablespoon capers, drained and rinsed
- 4 tablespoons extra virgin olive oil
1 fresh flat-leaf parsley sprig, chopped
Salt and pepper

- Directions:

- Cut the skate wings into fairly large pieces.
Heat the olive oil in a pan.

- Add the onion, parsley and garlic and cook over a low heat, stirring occasionally, for about 10 minutes until the onion is lightly browned.
Add the capers and tomatoes.

- Season with salt and pepper to taste and cook, stirring occasionally, for 10 minutes.
Place the skate in the pan.

- Add 2-3 tablespoons warm water, if necessary, and cook for about 30 minutes. Serves 4.
