- Shad with Sage
- (Agoni alla Salvia)

Ingredients:
1 and 3/4 lb (800 grams) shad, scaled and cleaned

6 fresh sage leaves
-
4 tablespoons extra virgin olive oil
-
1/2 pint (300 ml) milk
Plain flour, for dusting
1 and 1/2 oz (40 grams) butter
Salt

- Directions:

- Place the fish in a dish, add the milk and leave to soak for about 10 minutes.
Drain, pat dry with kitchen paper.

- Dust lightly with flour.
Heat the olive oil and butter in a frying pan.

- Add the sage leaves and cook until lightly browned.
Add the shad and cook for about 7-8 minutes on each side.
Season with salt and remove from the pan with a slotted spoon.

- Drain on kitchen paper and serve. Serves 4.
