- Perch with Sage
- (Pesce Persico Alla Salvia)

Ingredients:
1 lb and 5 oz (600 grams) perch fillets
8 fresh sage leaves
2 oz (50 grams) butter
Plain flour, for dusting
Salt and pepper
Directions:
-
- Lightly dust the fish fillets with flour.
Shake off any excess.
Melt the butter with the sage in a frying pan.
Add the fish and cook over a medium heat for 3-5 minutes on each side until light golden brown all over.
Season with salt and pepper and serve. Serves 4.
