- Peas with Pancetta
- (Piselli Alla Pancetta)

Ingredients:

- 2 and 1/4 lbs (1 kg) fresh peas, shelled
- 3 and 1/2 oz (100 grams) smoked pancetta, cut into strips
1 and 1/2 oz (40 grams) butter
Salt

- Directions:

- Cook the peas in salted, boiling water for about 15-30 minutes until tender.

- Drain well.
Melt the butter in a pan over a very low heat.

- Add the pancetta and cook until brown and tender.
Add the peas and cook, stirring occasionally, for another 5 minutes.
Transfer to a warm serving dish. Serves 4.
