Ingredients:

- 2 lb (900 grams) porcini mushrooms
- 1 garlic clove
- 3 tablespoons extra virgin olive oil
2 oz (50 grams) butter
1 fresh flat-leaf parsley sprig, chopped
Salt and pepper

- Directions:
- Heat the olive oil, half the butter and the garlic in a pan until the garlic is browned, then remove and discard it.
Add the porcini mushrooms to the pan and cook over a high heat for about 25-30 minutes until all the liquid they release has evaporated, then lower the heat.
Beat the parsley into the remaining butter in a bowl.

- Add to the pan and season with salt and pepper to taste.
Serve immediately or set aside and reheat gently before serving. Serves 4.
