- Perch Milanese
- (Pesce Persico alla Milanese)

Ingredients:
1 lb 5 oz (600 grams) perch fillets

2 oz (50 grams) plain flour
1 egg
3 oz (80 grams) breadcrumbs
-
Juice of 1 lemon, strained
4 tablespoons extra virgin olive oil
2 oz (50 grams) butter
Salt

- Directions:

- Mix together the lemon juice and olive oil in a dish.

- Add the perch, turning to coat, and leave to marinate for about an hour.
Spread out the flour in a shallow dish.

- Beat the egg with a pinch of salt in another shallow dish and spread out the breadcrumbs in a third dish.
Drain the fish.

- Dust lightly with flour, shake off the excess, dip in the egg and then in the breadcrumbs.
Melt the butter in a frying pan over a medium heat.

- Add the perch and fry for about 3-5 minutes on each side until light golden brown all over.
Remove the fish with a slotted spoon and drain on kitchen paper.
Transfer to a warm serving dish and sprinkle with salt. Serves 4.
