- Linguine with Genovese Pesto and String Beans
- (Linguine Al Pesto Genovese con Fagiolini)

Ingredients:

For the Pasta:
-
12 oz (350 grams) linguine
2 potatoes, cut into thin batons
2 oz (50 grams) string beans
For the Pesto:
24 fresh basil leaves
2 garlic cloves, chopped
5 tablespoons extra virgin olive oil
1 oz (25 grams) Pecorino cheese, freshly grated
1 oz (25 grams) Parmigiano cheese, freshly grated
Salt
Directions:

- Prepare the Pesto:
Put the basil, garlic, a pinch of salt and the olive oil in a food processor and process shortly at medium speed.
Add both cheeses and process again until blended.
Prepare the Pasta:
Cook the linguine, potatoes and string beans together in a large pan of salted, boiling water until 'al dente', then drain.
Toss with the pesto and serve. Serves 4.
