- Lentils With Sausages
- (Lenticchie Con Salsiccia)

Ingredients:
8 small Italian sausages
-
9 oz (250 grams) lentils
-
1 celery stalk
1 carrot
1 small onion
6 fresh sage leaves
1 garlic clove
2 tablespoons extra virgin olive oil
Directions:

- Soak the lentils in cold water for about 3 hours and drain.

- Put the lentils into a saucepan, add water to cover, and the celery, carrot and onion and bring to a boil.
Lower the heat and simmer for about 1 and 1/2 hours.
Put the sausages in a pan with 2 tablespoons water.

- Prick the sausages with a fork and cook for about 10 minutes until browned.
Heat the olive oil in another pan.

- Add the sage and garlic and cook over a low heat until the garlic is golden brown.
Remove and discard the garlic.
Drain the lentils and add to the flavored oil with the sausages.
Mix well and serve. Serves 4.
