- Lamb Cutlets Cooked In Vinegar
- (Costolette All'Aceto)

Ingredients:

- 8-12 lamb cutlets
- 6 fl oz (175 ml) white wine vinegar
- 1 onion, sliced
- 1 fresh flat-leaf parsley sprig, chopped
2 cloves
6 tablespoons extra virgin olive oil
Salt and pepper

- Directions:

- Mix together the vinegar, onion, parsley, half the olive oil and cloves in a dish.

- Season with salt and pepper.
Add the lamb cutlets and leave to marinate for 1 hour.
Heat the remaining olive oil in a frying pan.

- Drain the lamb cutlets.

- Add to the pan and cook for 2-3 minutes on each side until golden brown.
Transfer to a warm serving dish. Serves 4.
