- Couscous con Verdura
- (Couscous with Vegetables)

Ingredients:
3 cups boiling water
1 1/2 cups instant couscous
2/3 cup finely diced carrot
2/3 cup finely diced onion
2/3 cup finely diced zucchini
2 tablespoons unsalted butter
Salt and freshly ground black pepper

- Directions:

- In a medium saucepan, heat the butter over medium heat until it starts to foam. Add the carrots and onions, season them lightly with salt and pepper and cook, stirring occasionally, until it softens, about 4 minutes. Stir in the zucchini and cook for 2 additional minutes. Remove from heat.
Place the couscous in a heatproof bowl and pour the boiling water over it.
Add the sauteed vegetables, stir well with a fork and cover the bowl tightly. Let stand until the couscous is softened and the water is absorbed, about 5 minutes.
Remove the cover and fluff with a fork. Season to taste with salt and pepper and serve hot. Serves 6.
