- Bocconcini di Pollo con Pecorino

- (Chicken Morsels with
Sicilian Pecorino Cheese)

Ingredients:
1 lb. chicken breasts
1 tbsp. pine nuts
1 tbsp. chopped almonds
1 tbsp. raisins
4 oz. grated Sicilian Pecorino cheese
4 tbsp. butter
1/2 cup white wine
3 oranges
Fresh dill chopped
Salt and pepper
Directions:

- Cut the chicken breasts into bite size pieces.

- Lightly
flour and then brown in a pan with the butter. Then add the pine nuts,
the raisins and the juice of 2 oranges. Add salt and pepper to taste. Add the wine.

- When the morsels are almost done add the third orange
sliced and the grated Pecorino cheese.

- Toss and remove from the flame. Sprinkle with the
almonds and minced dill.

- Serve hot. Serves 4.
