- Baked Pumpkin with Potatoes
- (Zucca Al Forno con Patate)

Ingredients:

- 4 waxy potatoes, cut into 1/4-inch (5 mm) slices
- 14 oz (400 grams) pumpkin flesh, cut into 2-inch (1 cm) slices
- 1 onion, cut into rings
- 4 ripe tomatoes, peeled and diced
- Extra virgin olive oil, for brushing and drizzling
Salt and pepper

- Directions:
- Preheat the oven to 180°C (350°F) Gas Mark 4.
Brush an ovenproof dish with olive oil.
Make alternate layers of potatoes, pumpkin and onion in the prepared dish.
Sprinkle the tomato over the top.

- Drizzle with olive oil.

- season with salt and pepper.
Bake for about an hour.
Leave to stand for 5 minutes before serving. Serves 4.
