- Baked Pumpkin with Potatoes
- (Zucca Al Forno con Patate)

Ingredients:

- Extra virgin olive oil, for brushing and drizzling
4 waxy potatoes, cut into 1/4-inch (5 mm) slices
1 onion, cut into rings
14 oz (400 grams) pumpkin flesh, cut into 2-inch (1 cm) slices
4 ripe tomatoes, peeled and diced
Salt and pepper

- Directions:
- Preheat the oven to 180°C (350°F) Gas Mark 4.
Brush an ovenproof dish with olive oil.
Make alternate layers of potatoes, onion and pumpkin in the prepared dish.
Sprinkle the tomato over the top, drizzle with olive oil and season with salt and pepper.
Bake for 1 hour.
Leave to stand for 5 minutes before serving. Serves 4.
