- Baked Marinated Sea Bass
- (Branzino Marinato Al Forno)

Ingredients:
2 and 1/4 lb (1 kg) sea bass
1 onion, thinly sliced
5 tablespoons extra virgin olive oil
1 bay leaf
1 fresh thyme sprig
1 fresh flat-leaf parsley sprig
Salt and pepper
Directions:

- Trim the spines, scale and clean the sea bass.
Pour the olive oil into a dish and add the onion, thyme, parsley and bay leaf.
Place the fish in the dish, turning to coat, and leave to marinate, turning occasionally, for about an hour.
Preheat the oven to 200°C (400°F) Gas Mark 6.
Remove and discard the herbs.
Transfer the fish to a roasting tin or ovenproof dish.
Season with salt and pepper and brush with some of the marinade.
Bake, basting occasionally with the marinade, for about 20 minutes.
Serve with boiled or steamed vegetables. Serves 4.
