- Tagliatelle with Smoked Salmon
- (Tagliatelle al Salmone Affumicato)

Ingredients:
-
3 and 1/2 oz (100 grams) smoked salmon, chopped
2 oz (50 grams) butter
5 tablespoons whisky
Juice of 1/2 lemon, strained
3 and 1/2 fluid oz (100 ml) double cream
10 oz (275 grams) fresh Tagliatelle pasta
Salt and pepper
Directions:

- Melt the butter in a saucepan.

- Add the salmon, stir and splash with the lemon juice.
Cook for a few minutes, then add the cream and whisky and season with salt and pepper.

- Cook over a low heat for about 5 minutes.
Cook the tagliatelle pasta in a large pan of salted, boiling water until 'al dente'.

- Drain, add to the sauce and cook for an additional few minutes.
Toss gently and transfer to a warm serving dish. Serves 4.
