- Spaghetti With Raw Tomato
- (Spaghetti al Pomodoro Crudo)

Ingredients:
1 lb 2 oz (500 grams) ripe vine tomatoes (peeled, seeded and chopped)
8-10 fresh basil leaves, chopped
2 garlic cloves

4 tablespoons extra virgin olive oil
12 oz (350 grams) spaghetti
Salt and pepper
Directions:

- Put the tomatoes into a large bowl, add the olive oil, basil and garlic and season with salt and pepper.
Mix well, cover and set aside in a cool place for about 30 minutes to allow the flavors to mix.

- Remove and discard the garlic.
Cook the spaghetti in a large pan of salted, boiling water until 'al dente', then drain and toss with the raw tomato sauce and serve. Serves 4.
