Marinated Pot Roast
Marinated Pot Roast
(Arrosto Marinato)
 
 
Ingredients:

For the Beef:
2 lbs (900 grams) topside beef
2 tablespoons extra virgin olive oil
2 oz (50 grams) butter
1/2 oz (15 grams) plain flour
Salt

For the Marinade:
1 onion, sliced
1/2 bunch of mixed fresh herbs including parsley
7 fl oz (200 ml) extra virgin olive oil
6-8 black peppercorns

Directions:
 
Mix together all the marinade ingredients in a dish.

Add the meat, turning to coat, and leave to marinate for about 6-7 hours.

Drain the meat, reserving the marinade.

Heat the olive oil and half the butter in a flameproof casserole.

Add the beef and cook, turning frequently, until browned all over.

Season with salt and cook over a low heat for 1 and 1/2 hours or until cooked through and tender.

Remove the meat from the casserole and leave to stand.

Mix together the flour and remaining butter.

Stir the paste into the cooking juices.

Cook, stirring until slightly thickened.

Strain in a little of the reserved marinade.

Carve the beef and serve with the sauce. Serves 6.
