Lemon Sorbet with Vodka
Lemon Sorbet with Vodka
(Sorbetto Al Limone Con Vodka)
 
 
Ingredients:

3 lemons
17 oz (200 grams) caster or superfine sugar
2 fl oz (50 ml) vodka

Directions:
 
Thinly pare the rind of one of the lemons and squeeze the juice from all three of them.

Pour 18 fl (500 ml) water into a saucepan.

Add the sugar and lemon rind and bring to a boil, stirring until the sugar has completely dissolved.

Boil for 15 minutes, then remove from the heat.

Remove and discard the lemon rind and place the syrup on the side to cool.

Strain the lemon juice into the syrup and add the vodka.

Pour into an ice-cream maker and freeze for about 20 minutes or according to the manufacturer's instructions. Serves 6.
