- Baked Cod with Vegetables
- (Merluzzo al Forno Con Verdure)

Ingredients:
4 cod fillets
13 oz (80 grams) pancetta, sliced
4 tomatoes, peeled and chopped
1 leek, white part only, thinly sliced
2 carrots, sliced
1 onion, thinly sliced
Juice of 1 lemon, strained
12 oz (50 grams) butter
7 fl oz (200 ml) milk
Salt and pepper
Directions:

- Preheat the oven to 200°C (400°F) Gas Mark 6.
Sprinkle the cod with the lemon juice.
Season with salt.
Wrap in the pancetta slices.
Melt the butter in a flameproof casserole.
Add the tomatoes, leek, carrots and onion and cook, stirring constantly, for about 10-12 minutes.
Season with salt and pepper.
Add the cod, cover and bake for about 22-25 minutes.
Lower the oven temperature to 180°C (350°F) Gas Mark 4.
Pour the milk into the casserole, return to the oven and bake for a another 15 minutes.
Transfer the fish to a serving dish.
Ladle the hot cooking juices over it and serve. Serves 4.
