- Baby Carrots In Cream
- (Carotine Alla Panna)

Ingredients:

- 1 and 3/4 lb (800 grams) baby carrots
1 oz (25 grams) butter
1/4 pint (150 ml) double cream
Pinch of freshly grated nutmeg
1 fresh flat-leaf parsley sprig, chopped
4 fresh chives, chopped
Salt and pepper

- Directions:

- Cook the carrots in salted, boiling water for about 10 minutes.
Drain and leave to cool.
When cold, cut into thin batons.
Melt the butter in a pan over a low heat, pour in the cream, add the nutmeg and season with salt and pepper.
Bring to a boil, add the carrots and cook for a few additional minutes, then add the parsley and chives.
Mix well and cook for an additional 2-3 minutes.
Serve while hot. Serves 4.
